4-Ingredients Tiramisu

Ingredients

16oz or 450 grams of mascarpone cheese

3/4 cup or 150 grams of granulated sugar

5 large egg (room temperature)

Plain cookies or ladyfingers

Espresso shots (Optional)

For the base

 

Dip the cookies in espresso shots until

it is entirely covered.

or

For those who do not want coffee in tiramisu:

Dip the cookies in whole milk.

 
 

*It is crucial that you use proper espresso shots and not pour-over coffee or filter coffee. The latter is too watery and lacks the richness necessary to impart proper flavor to the base. 

 


 

For the Cream

  1. Separate egg whites and yolks into two bowls.

  2. Beat whites until stiff peaks form, 2 to 3 minutes. Set aside.

  3. Beat yolks with sugar until it turns very pale yellow.

  4. Add mascarpone cheese into yolks mixture and slowly mix until incorporated.

  5. Gently fold in the white into the cheese mixture and mix until incorporated. (Be careful to not over mix. This will cause the egg whites bubble to pops and result in watery cream)

or

A slightly simplified version:

  1. Beat the whole eggs and sugar together until the mixture turns light yellow with an airy texture.

  2. Gently mix in the mascarpone cheese.

Putting it together

  1. Lay the cookies at the bottom of the container (be it a cup or large casserole pan) and pour a generous amount of cream over the cookies (around 2 inches of cream). 

  2. Add another layer of cookies on top of the cream. Pour a similar amount of cream over the cookies layer.

  3. Sprinkle a small amount of cocoa powder on top to finish it off if desired. 

  4. Put in the fridge for at least 30 minutes before serving
