Raspberry Brie Cups

By Jessica Hensel

The tart of the raspberry perfectly complements the creamy richness of the brie, making each bite delicious.

Ingredients:

  • 30 Pre-made Filo cups

  • 40 oz jar/60 t Raspberry jam, seedless

  • 3 lbs Brie cheese (estimating 40g per cup (~ 2 tablespoons)

  • 30 Fresh raspberries

Directions:

  1. Cook phyllo cups according to package instructions (350 degrees for 5-10 minutes).

  2. Remove the white outer layer from the brie. Cut brie into tiny slices, enough to fill 1/3 to 1/2 of a cooked phyllo cup.

  3. Scoop a small amount of jam into each phyllo cup, filling about 1/3 to 1/2 of the cup. Then place brie slices onto the other side of the cup.

  4. Bake for 5-10 minutes until ingredients melt.

  5. Cool then add 1 raspberry to each phyllo cup as garnish.
