Pumpkin Seed Granola Bars

These no-bake granola bars are the perfect in between class snack. Packed with seeds, nuts, coconut, and tons of dried fruit from the local Ithaca farmer’s market, these bars are a fresh and delicious midday pick me up. 

Ingredients

1/2 cup almond butter (or nut butter of choice)

2 tbsp coconut oil 

1/3 cup maple syrup

1 tsp vanilla extract 

1/2 cup pumpkin seeds

1/2 cup roughly chopped cashews

1/2 cup slivered almonds

1/4 cup dried cherries

1/4 cup chopped dried apricots

1/2 cup toasted shredded coconut

1 tbsp chia seeds

1/2 tsp cinnamon

Instructions

  1. In a large bowl, mix together the dry ingredients (pumpkin seeds, cashews, almonds, cherries, apricot pieces, coconut, chia seeds and cinnamon).

  2. In a separate bowl in a microwave, heat the nut butter and coconut oil for one minute (until melted). Add in the maple syrup and vanilla extract. microwave 3. Mix the wet and dry ingredients together and stir until well combined.

  3. Pour mixture into an 8 x 8 baking pan lined with parchment paper and refrigerate until solidified (at least 90 minutes)

  4. After refrigerating, cut into 12 bars and enjoy!
