Coconut Curry Noodle Bowl (adapted from Anabel’s Grocery)

Hidden in the maze of Anabel Taylor Hall lies the key to celebrating Earth Day on campus—Anabel’s Grocery. As I walked the dim halls, encouraging signs guided me toward the back of the building. I knew I was nearing the store when I heard the hustle and bustle of students shopping for groceries after class. A cozy ambiance greeted me, and I immediately noticed the tables, baskets, and shelves stocked with the new grocery picks of the week. Squeezing through the crowded space, I found my target ingredients: sweet potato, onion, broccoli, spices, coconut milk, and whole wheat spaghetti. The key is, of course, that these ingredients are all locally sourced in the greater Ithaca area, speaking to Anabel’s mission of sustainability. While I went to Anabel’s with a recipe in mind, the store is also friendly to those who are just browsing the aisles for fresh produce, artisan breads, bulk spices, and more. At the checkout line, a student helped me with my items, as Anabel’s also boasts a student-run staff. Now, with my ingredients in hand, I can whip up my Earth Day recipe: a vegan coconut curry noodle bowl. 


Coconut Curry Noodle Bowl (adapted from Anabel’s Grocery) 

Serves: 2

Ingredients: 

  • 2 cloves garlic, minced

  • 1 tbsp oil

  • 1 medium sweet potato, cubed

  • 1 head of broccoli

  • 1 medium yellow onion, diced

  • ¼ tsp ginger powder

  • 1 tbsp curry powder

  • 1 tbsp turmeric

  • 1 16-oz can coconut milk

  • 1 16-oz block tofu, cubed

  • Salt and pepper to taste

  • 8 oz whole wheat spaghetti

Directions: 

  1. Boil sweet potato cubes in salted water until tender, about 10 minutes. 

  2. Heat a large saucepan over medium heat, and add oil. 

  3. Cook the onion until slightly translucent. Add garlic, salt, and pepper. 

  4. Add the broccoli and tofu and cook for 2 minutes, then add the sweet potato and coconut milk. 

  5. Incorporate the ginger powder, curry powder, and turmeric. Add salt and pepper until the desired flavor is reached. 

  6. In a separate pot, cook spaghetti according to instructions and drain. 

  7. In a bowl, add spaghetti, pour the curry over the top, and enjoy!
