Cajun Sweet Potato Fries
By George Tsourounakis; Edited by Christina Picornell
I love love love spicy food. I carry around hot sauce in my bag. It used to be a little bottle but it ran out so now I have resorted to stealing packets from CTB. When making myself a spicy indulgent treat, I try to stay on the healthy side. So, what better way to make Cajun fries than using sweet potatoes? They are filled with Vitamin C, Vitamin B6, Vitamin D, Iron, Magnesium, and more. The benefits are endless and better than just regular ol’ potatoes.
INGREDIENTS
3-4 large sweet potatoes
¼ cup of olive oil
3 tablespoons of hot sauce (my favorite is Frank’s)
2 tablespoons of thyme
1 tablespoon of oregano
1 tablespoon of garlic powder
1 tablespoon of salt
1 tablespoon of fresh pepper
1 tablespoon of cayenne
1 teaspoon of cumin
DIRECTIONS
Preheat your oven to 400ºF and cover a baking sheet with parchment paper.
Wash and cut your sweet potatoes. First cut the sweet potato in half and then into whatever size wedges you prefer. I like my fries a little on the crunchy side, so I cut them into thin wedges
Once all your sweet potatoes are cut, set them aside.
In a bowl, whisk together all of the ingredients for the fries.
Once the sauce is made, add in the cut sweet potatoes.
Toss to combine with the sauce and then lay them out in a single layer on the baking sheet.
Bake in the oven for 15 minutes then remove and flip the fries.
Then bake for another 10-15 minutes until the fries are brown and crispy.
Enjoy with your favorite dipping sauce or straight up!
